After reading Gary Taubes enlightning GOOD CALORIES, BAD CALORIES I was determine to change! Armed with my own two hands, the internet (thank God for AMAZON.com), and all those wonderful blogs and podcasts available now, I am beginning my journey.
Please feel free to join me as I try to adapt all of our Southern Favorites into Gluten Free and Keto Appropriate Scrumptiousness!!! I will try to post all of the good ones, and may even blog about some failures along the way.

Did you know???

 Did you know that the mainstream high carb, low fat at all cost diet that our Docs and the AHA and the Government press- well its just WRONG!!!

The Food Pyramid is not right! This is still amazing to me....

What they are teaching my children and your children in wellness is all based on facts that are wrong!!!!


Why do our docs not read all the research thats out there and change tx protocols???
A lot probably do read it, I know my doc keeps up with research, but maybe my doc is just especially good????

But why not change their tx protocols??? Advocate the CORRECT good nutrition??

One word- LIABILITY ya'll.

If the docs don't follow what the mainstream recommendations are, well it is much easier for you to sue them if you think something went wrong????
Americans are sue happy!- I find this so sad.

WOW... I am learning so much. As I have been sick for so long with this or that, I started  reading the research... and wow is it out there.
Millions of Dollars our government has spent on researching nutrition, heart health, drugs, etc...
But they do not go mainstream with almost any of the results...
We just expect to get the truth, but its not being readily shared often- if the study doesn't show what they want it to, well they leave it be.. There is so much big money in lobbying these days, and certain views are pushed no matter what...
the AHA says eat low fat, high carb for heart health.
they say take statins,
they say statins will help you avoid heart attachs if your Lipid Profile is not what they want it to be....
Well did you know that there is NO evidence in the million dollar studies out there to prove that eating a low fat high carb diet will prevent Heart Diesease? thats right, NONE.
in fact the research shows the opposite! It show high quality fat, low carb is where it is...
Why is the government and the AHA not changing their tune and telling us??? I really don't get it, but I know the answer lies in FOLLOW the MONEY trail.
Also...Did you know that there is NO BENEFIT for a woman to be on a statin drug. There is ZERO correlation found that heart attacks, heart disease can be prevented by taking these drugs. There is ZERO correlation with a high Total Cholesterol, or LDL number with if that person will have a heart attack.
The one and only one catagory of people that research has shown can benefit from Statin- men over 40 who have already had a heart attack and have at least one stent--here there has been some promise shown.
Don't get me wrong, statins work really well to lower cholesterol. But it turns out lowering your cholesterol does not equal heart health. It turns out what matters is the quality of LDL you have swimming around in your body... Do you have big fluffy LDL, or do you have tiny sticky LDL... and statins will not change this- and this is the biggest predictor of Heart Disease actually.
If you have tiny sticky LDL you are at a much higher risk for Heart Disease... If you have big fluffy LDL, even if your LDL number is high, well these types just do not stick to the walls of your blood vessels, they just bounce around... Its those little sticky ones that, well they stick to each other and to the artery walls and cause sclerosis, and thus heart disease.
And you know what, a Cholesterol Profile screen does not even show the type of LDL you have most floating around in your body....So a Lipid profile is just really not that helpful ya'll. Who knew???
As a nurse, I always though Cholesterol was the end all be all....I am learning so much when I actually READ the research, rather than just listen to the mainstream toutings of the media...
And did you know what side effects are being shown from statins in the research???--
Muscle pain and fatigue ( this can be permanent damage)
Alzheimer Disease
auto-immune issues
These are some crazy bad side effects ya'll!!!! Please research this if you are taking Statins!!!!

And change your diet- did you know most of us can change the type of LDL we have by changing our diet.... Stop eating gluten. Stop eating processed foods. Ditch the sugar. Eat Grassfed pastured meats, wild fish.... and then go back in a couple months and recheck your LDL- but with a test that shows the type of LDL- be specific with your doc when you ask!!! Unless you have a major genetic issue that makes you have little sticky LDL, almost across the board you will have more Big Fluffies, and the anti-inflammatory diet will also help prevent the damage at the artery walls!!!!!

  1. I think that you have some excellent things to say, and I enjoy reading your thoughts. However, I may suggest, that the font you are using is very distracting. It is quite difficult to read, and actually ends up taking away from the validity of your comments. Just a friendly thought :)
