After reading Gary Taubes enlightning GOOD CALORIES, BAD CALORIES I was determine to change! Armed with my own two hands, the internet (thank God for AMAZON.com), and all those wonderful blogs and podcasts available now, I am beginning my journey.
Please feel free to join me as I try to adapt all of our Southern Favorites into Gluten Free and Keto Appropriate Scrumptiousness!!! I will try to post all of the good ones, and may even blog about some failures along the way.

So Whats For Dinner this week...

 Here is what we will be eating for Dinner This week in our house... ( subject to change of course!!!
I have to say Menu Planning for a week or two at a time is SUCH a great idea ( in theory).... I sometimes have trouble sticking with my plan I have to confess.... I do usually make the majority of the meals, but sometimes, well sometimes LIFE HAPPENS, ya know what I mean??? 
Maybe I don't feel like Curry, or maybe someone is sick, or something else comes up.....
I do think having a solid plan really is a good idea though.... and sometimes I switch up which night we have what, but having a base plan is very helpful!!! 
It really is. 
I just have not always worked within this type of planning, often I just have cooked out of my pantry with a few ingredients I have added in that week that sounds good or looks good.... but as I am trying to try out new Paleo friendly recipes for my family, as well as to share,... well I am trying to learn to plan more in the process!!!!
So here is what my plan is for this week: 

Monday
Salisbury Steak with Onions Mushrooms and blue cheese crumbles, Baked Sweet Potato, Salad
Tuesday
Vinegar Chicken with Greens (Collards probably)
Wednesday
Flat Iron Steak Fajitas in Lettuce Wraps
Thursday 
Slow Cooker Lamb Curry, Roasted Cauliflower
Friday
Meatloaf with a Twist ( will post if it turns out as good as I am hoping it will)
Saturday 
breakfast- country ham and gluten free biscuits ( yes, I am trying again in my biscuit quest)
dinner-Tandoori Fish, Salad, Fresh Veggie
Sunday
Slow Cooker Chicken Mole, Re-fried Beans, Home Fried Tortilla Chips

School Lunch Plans for this week for the kiddos--
one from each of the below categories--
Protein-Meat Roll-ups (Roast beef, Turkey, Ham spread with fresh local goat cheese and rolled up) or
Pepperoni Slices
Fruit-Grapes, Blueberries, Applesauce or Apple/Carrot Crushers
Dairy- Cheese sticks or whole milk yogurt
a couple days they will have a handful of fried bananas (in coconut oil) as a treat added....

  1. Well its only Tuesday and I have already veared from the plan... Last night I made Meatlovers Burgers with Roasted Carrots...Tues, (tonight) I tried the Vinegar Chicken...not sure my fam will love it... what to do??? Maybe we will go out and I will eat on over the week....or maybe make it into a casserole to down play the tart... I think I used too much vinegar in my vinegar/tomato juice marinade....
