This is my story of how I am striving to change my family's life, nutritionally, for the better. Here in the deep South Keto is just now becoming more known.
After reading Gary Taubes enlightning GOOD CALORIES, BAD CALORIES I was determine to change! Armed with my own two hands, the internet (thank God for AMAZON.com), and all those wonderful blogs and podcasts available now, I am beginning my journey.
Please feel free to join me as I try to adapt all of our Southern Favorites into Gluten Free and Keto Appropriate Scrumptiousness!!! I will try to post all of the good ones, and may even blog about some failures along the way.

All Local Farmers Market- downtown Columbia!!!!!

Today we went to the ALL LOCAL farmers market
 that Columbia has each and every Saturday morning from 8-12am. We are truly blessed here with some wonderful opportunities to have LOCAL, fresh, Organic foods at our doorstep.
Its at 711 Whaley St downtown Columbia,SC.
I know some do not have access, and some people around here don't even realize how available good quality produce and meats around here. When I first started tryin to be more healthy in our food consumption I was so amazed at how much SC has to offer!!!
Just open your eyes and look around if you are in the SOUTH. We have great weather for lots of fresh, and we are full of Farmers who strive QUALITY, and use heirloom seed, and treat their garden organically... I could go on!!! Veggie farmers and Cow, chicken and Hog Farmers!!!
Just at this one market you can get organically fresh milled grains from ANSON MILLS, including some GF prodcuts, amazing Carolina RICE and Carolina GRITS, fresh organic veggies, Fresh MILK and BUTTER and EGGS and CHEESES, and all sorts of Pastured MEATS! Oh my!
There was one vendor serving AMAZING gelato- we tried Blood Orange- the kids lapped it up, and I only got a small bite-next time I get my own! What a treat!
There was a  BBQ food truck that is somewhat new to Columbia called  BONE IN
... they serve artisan BBQ and sides --made with CAW CAW creek HOG... if you haven't heard of CAW CAW Creek, well  you need to check into it. This weekend they served a  roasted-garlic pound cake (yes, pound cake) topped with bacon jam made from local Caw Caw Creek bacon. We had brisket, pulled pork and the RIPPER- a fried hot dog!!! All were great- especially the brisket. The handmade potato chips have a great fresh dill that makes them wondeful! CAW CAW Creek They supply Pork products to some darn FAMOUS chefs, and some amazing restaurants- THOMAS KELLER uses their pork, as well as some great restaurants in Charleston, SC.
I have been meaning to render down my own Lard, and they sold me LeafLard fat and FatBack to render down. It was easy!!! See this post on rendering down your own LARD. Unfortunately any lard in the grocery store tends to be hydronated for shelf life, rendering it BAD FOR YOU. But pure lard, well its a wonderful substance. Leaf Lard is great for Baking, and Fatback renders down to a LARD great for savory applications. I also bought some sausage that he claims is a huge hit with the kids, can' t wait to make it- and I plan to buy all my pork from him from now on! Pastured Heirloom Hog!!!

Next, in my quest for EGGS and butter --- No more searching, Wil-Moore Farms brings it to market every Saturday!

2# of butter for $10 people!! ( In the store a small amount of butter that is from pastured cows in at minimum $5. and that is for KerryGold, imported butter..
This is beautiful LOCAL butter!!!! Read-FRESH!
and eggs!!!! FRESH AND LOCAL!!!!! and pastured chicken, well their eggs are SOOOO much healthier for us!- I had just bought 2 dozen eggs on Fri, so I will have to wait until next trip, but so excited!!!!!
They also have tons of BEEF! and Lamb!!! All locally pastured!!!!! and they bring it all to market every Saturday!!!
I can stop ordering online and having it delivered from Nebraska and Minnesota or some where--- its here, its LOCAL!

There were some other great vendors too!!! You can get fresh seafood from Sea Eagle market Seafood-local fish from Beaufort, SC, fresh flowers, Artisan bread and pastires from Heather's Artisan Bakery. They looked wonderful, made me wish I was not Gluten FREE for a day!
