After reading Gary Taubes enlightning GOOD CALORIES, BAD CALORIES I was determine to change! Armed with my own two hands, the internet (thank God for AMAZON.com), and all those wonderful blogs and podcasts available now, I am beginning my journey.

Cafe au Lait Pudding to die for!!!!

So Yummy, we ate half before I remembered to take a pic!!! This is the best one I have, it looked pretty at first I promise!

Cafe au Lait Pudding

1 1/2 cups heavy cream
1/2 cup strongly brewed coffee
2 T cornstarch
1/4 cup brown sugar
1/4 tsp salt
1/4 cup heavy cream to make Whipped Cream

(This will make 2 servings) 


Mix together all dry ingredients, whisk them well so that there are no clumps.
Cook heavy cream and brewed coffee on lowish heat until simmering.
Once it reaches a simmer add in your sugar mixture.
Whisk constantly for 1 min and then take it off of the heat. 
Pour into your serving dishes through a strainer( I used smallish coffee mugs) and cover on the surface with plastic wrap so that a film does not form. 
Place in fridg to set up-  around 3 hours.

When ready to serve- whip up your cream in a stand mixer. To whip cream start it slowly, then after a minute you can speed it up until you are on high speed. Watch it and as soon as it is thick turn it off and you are ready- EASY PEASY
  • I don't add anything to the cream to sweeten it because the pudding is already so sweet, but you could add a tad sugar to your whipping cream if you wish.
