This is my story of how I am striving to change my family's life, nutritionally, for the better. Here in the deep South Keto is just now becoming more known.
After reading Gary Taubes enlightning GOOD CALORIES, BAD CALORIES I was determine to change! Armed with my own two hands, the internet (thank God for AMAZON.com), and all those wonderful blogs and podcasts available now, I am beginning my journey.

Fajita Night

Tonight was Fajita Night at our house. Fajitas are a great meal for the Paleo lifestyle. Super Healthy and YUMMY! and really not very much work truthfully. As Martha says, ITS A GOOD THING!!!!
So I made Flat Iron Steak and Chicken fajitas with onions, peppers, and mushrooms....and lots of yummy sides.
STEAK AND CHICKEN FAJITAS
 2 flat iron steaks
3 large chicken breasts, each split in half
1 cup tequila
1 lemon, juiced
1 lime, juiced
garlic salt
pepper
cumin 
1 large onion, sliced
2 green peppers, sliced and 2 red peppers, sliced
2 pkg cremini mushrooms, sliced
romaine leaves (whole)
any toppings you so desire
( I also served a homemade avocado dressing)
 (this recipe will serve a LOT, I served 9 people with leftovers)


Directions:
Marinate chicken and beef overnight-- (even a few hours is ok)--- Combine tequila, juice of lime, juice of lemon. Rub meat with garlic salt, cumin, and cracked pepper and then place in ziplock bags to marinate. 
To make fajitas-- tell your hubbie to grill meat on the grill, and while its grilling saute all of your veggies in a mixture of coconut oil and butter till soft and tender.
  • You may need to do veggies in a few batches, if you crowd the pan they won't brown and carmelize, they will just get soggy
  • you could also grill your meats on a indoor stovetop grill if you wanted to
Set out all of the toppings. and call them all to the table. You are about to have some AMAZING eating!!!!! I promise this is a winner.
I did heat up some corn tortillas on the stove top griddle for those that wanted them...but I served large romaine leaves to serve as tortillas.
Here is my version, well all the veggies are buried by meat....but its all in there!!!!

again sorry about all the bad photography, maybe one day I will get a better camera...and maybe one day I will learn to take time with my pics to and set them up pretty!!! Mostly we are in such a hurry I just do not have the time!!!!!
