This is my story of how I am striving to change my family's life, nutritionally, for the better. Here in the deep South Keto is just now becoming more known.
After reading Gary Taubes enlightning GOOD CALORIES, BAD CALORIES I was determine to change! Armed with my own two hands, the internet (thank God for AMAZON.com), and all those wonderful blogs and podcasts available now, I am beginning my journey.
Please feel free to join me as I try to adapt all of our Southern Favorites into Gluten Free and Keto Appropriate Scrumptiousness!!! I will try to post all of the good ones, and may even blog about some failures along the way.

Beef, its whats for dinner.... (oh, and a Soup and Muffin recipe too!)

Last night for dinner we had BEEF Tenderloin, Asparagus, Sweet Potato Mash and a Salad. It wasn't the "planned" meal, but my friend brought over some amazing tenderloin that we sliced and grilled up- medium to med-rare- SO GOOD. So Simple. Just season and grill....

I also needed to make a special lunch for the kiddos for today, thier Maggie and PapPap were going to be taking lunch to them at school...
They wanted muffins and soup. I had some leftover Meatballs ( from my Saucy Balls recipe..) so I made up a quick soup. It was pretty yummy, and took 2 secs (well ok 15min maybe if you include cooking some rice to add in, but you can totally skip the rice...) Check it out....

Tomato Soup with Meatballs
frozen meatballs ( homemade preferably)
  1 quart jar canned tomatoes, whole ( crush them as you add them)
1 small can tomato paste
water to make liquid enough ( I just used my quart jar and filled it up and poured a tad at a time till it was the consistency I wanted)
basil (if dry add in beginning, if fresh add last few min)
1/2 large onion, diced 
garlic clove, finely diced
3 or 4 T butter
some leftover rice to throw in, or make up a couple servings of rice-  
(rice totally optional)

Directions 
Saute your onion and garlic in butter. Add Rest ingredients up to rice. Stir well and simmer over low for at least 30 min. Add rice before serving if you would like the extra carb load...

(sometimes i add some rice, or potato to things to give my kids the extra carbs..)


Apple Cinnamon Muffins- GF
I made my base muffin recipe and this time added finely diced and sauteed apples with cinnamon and allspice. YUMM! This recipe just never fails! The best base muffin recipe- and its Gluten FREE of course!!!
I love how I can add in anything I want, or just even plain they are good, warm with a slab of butter on top!!!! , a bit of butter??
